Today I was hungry all day; craving something specific but seemingly unattainable. Part of this craving came from general unhappiness at my packed lunch. I had eaten it the day before and was underwhelmed. What I really wanted was an everything bagel from the nearby Jewish deli, smothered in cream cheese and topped with lox. Oh, and at least two pickles from their giant barrels of pickles (one dill, one garlic). But I had a perfectly good lunch in the refrigerator and I thought it might be uncouth to order bagels during Passover. I ate my lunch, which actually was a little better today than the day before, but still felt uncomplete. (Wearing tights that ended up being ill-fitting really didn't help things.)
I finally found what I was looking for. I made myself a German pancake for dessert. It's something my mother likes to make because it's easy, tasty, and hits the spot.
2 eggs
1/2 c. flour
1/2 c. milk
Powdered sugar
Lemon juice
Heat oven to 400 degrees (must be hot). Melt 2 tablespoons butter in pan in oven (we usually use a cast iron pan). Beat eggs, add flour. Mix well (use wire whip) until smooth. Add milk and beat again. Pour into hot melted butter in pan. Bake 15 minutes or until golden brown on edges (like a large popover). Remove from pan onto plate. Sprinkle with lemon juice (2 tablespoons) and powdered sugar. Cut and eat
